Whole Wheat Vanilla Protein Muffin
What you need:
4 egg whites
1 cup unsweetened almond milk ( or milk of your choice)
2 tbsp olive oil
2 cups of whole wheat flour
1/2 cup vanilla protein powder
1 tsp baking powder
1 tsp baking soda
How to put it together:
Heat oven to 325. In a large bowl beat 4 egg whites with electric mixer until really nice and foamy. Add in 1 cup of almond milk and 2 tbsp oil. In another bowl sift flour, baking powder and baking soda. Then add that to your egg/milk mixture. Put in your protein powder and mix. Spay muffin pan with olive oil cooking spray and pour in your batter. Cook 18 minutes or until done.
I topped mine with strawberry fig jam that I got from my local farmers market and a tbsp or 2 of glaze.
Glaze:
1/2 cup powdered suger
1 tbsp butter
1 tbsp (maybe 2) of unsweetened almond milk
Melt butter and mix with powdered sugar and milk. Spoon over your muffin.
Instead of glaze you can do greek yogurt, almond butter, pure maple syrup or whatever else you feel like. The only reason I made a glaze was the were supposed to be donuts. I didn't have a donut pan though so I used a muffin one and they turned out to be delicious muffins!! But I promised my kids donuts so I had to give them a glaze. Enjoy!!!
